MEXICAN VEG SIZZLER

Impress your friends and family with restaurant style Mexican Veg Sizzler. This is a meal filled with sizzling grilled cottage cheese in spicy Mexican sauce served along a bed of Mexican fried rice and sautéed exotic vegetables. Great to be served as a weekend meal to your family.



INGREDIENTS (serves 4 people)


Mexican rice

  • 2 cup half cooked rice

  • 1 tbsp boiled kidney beans

  • 1/2 cup chopped green/red/yellow bell peppers

  • 1/4 cup Broccoli cut into small florets

  • 1/2 tsp lack pepper powder

  • 4 finely chopped garlic cloves

  • Finely chopped 1 Carrot finely chopped

  • 5 French Beans

  • 1 Finely chopped onion

  • 1 tbsp red chili sauce

  • 1 tbsp taco powder

  • 1 tbsp tomato sauce

  • 1 tsp sugar


Vegetable stir fry

  • 1/2 Green/Red/Yellow bell peppers each sliced into diamonds

  • 1/2 cup broccoli cut into small florets

  • 4 Baby corns

  • 5 French beans


Mexican sauce

  • 1 tsp butter

  • 3-4 finely chopped garlic cloves

  • 1 tbsp chili sauce

  • 3/4 cup water

  • 1 tsp tomato sauce


Other Ingredients

  • Butter

  • 200 g cottage cheese/paneer/tofu (for dairy free version)


Prepare Mexican rice

  • Heat oil in a wok over medium heat. Add finely chopped garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. Stir in rice until toasted, about 2 minutes

  • Stir in tomato sauce and vegetable broth, and bring to a simmer, about 2 minutes. Stir in corn, carrots, peas, chili powder and cumin, taco seasoning; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 13-16 minutes. Stir in tomatoes. Rice is ready (you can add boiled kidney beans)

Prepare Vegetable Stir Fry

  • In a heavy-bottomed skillet, heat the butter and sauté veggies..like carrots, broccoli, bell pepper, mushrooms, French beans and paneer cubes and sauté sprinkle some pepper and salt

Mexican sauce

  • In a pan add butter add finely chopped garlic 4-5 pods, saute and add 1/4cup water then add 3 spoons chilli sauce 2 spoons Tomato sauce, I also added 2 spoon bhut jolokia chilli sauce for extra spice and then 1 spoon honey

Arranging on sizzler plate

  • Now put sizzler tray on a high flame. After 1-1.5 mins, reduce it to medium flame and then Place cabbage (cut into long stands), and all veggies- French beans and carrots, paneer cubes and rice on one side with mash potatoes. Put butter with spoon below cabbage. Pour the Mexican sauce on veggies and paneer cube and sizzle. Increase the flame to high for 2 more minutes..hot and tasty Mexican sizzler is ready to serve


Notes:

  • For dairy free version replace cottage cheese with tofu, butter with cooking oil

  • For nonveg version- Replace paneer with chicken wings/steak

  • If you don't have sizzler plate, you can also use a non-stick tawa. Though you will get a sizzling effect with that it won't stay hot for a long time but you can definitely enjoy it
